Pancetta arrotolata or Rolled Bacon

Rolled Bacon is a concentrated flavor and aroma, it is obtained from the ventral part of the lean pork, salted and seasoned with pepper and other spices. When cut, the slice is characterized by the typical alternation of bright red layers and white pinkish. On the palate, the slice is soft and tends to melt due to the presence of the fat, which also determine the delicate and sweet taste, it’s this flavor that makes the product particularly appetizing. It is prepared by rolling up the piece of meat on itself to obtain the cylindrical shape.

How to prepare the Rolled bacon

The bacon machining process has four phases:
• Initially salting procedure, by sprinkling the meat with a mixture of salt and spices, following the traditional recipe;
• Followed by, a cold rest period to allow the salt and flavorings to be distributed evenly in the mixture;
• After massaging, the bacon is left to dry in special rooms, for a period ranging from 3 to 5 days;
• Drying completely, then starts the curing period, which will last no less than two months
