Milk is produced in a wide area of Basilicata traditionally coincides with the ancient paths of transhumance flocks. This cheese is made from milk from sheep and goat flocks raised on the pastures of sixty towns of Basilicata, and then be cured only in special storehouses of Moliterno.
Canestrato di Moliterno is a goat cheese hard cheese product for 70-90% whole sheep’s milk and goat’s milk. Has a cylindrical shape and a diameter of about 20 centimeters and a height between 10 and 15 centimeters. Weight may vary between 2 and the 5 kilograms.
The flavor of Canestrato di Moliterno is slightly spicy, perfect as a table cheese when fresh, preferably, hard when cured.
